How to cook (guide)
Soft breakfast porridge (serves 4):
Bring 1 litre water + pinch of salt to a simmer.
Whisk in 250g maize meal gradually.
Cook 10–15 mins, stirring, to a creamy consistency. Add milk/butter if you like.
Stiff pap for braai plates:
Boil 1 litre salted water.
Sprinkle in 400–500g maize meal, don’t stir; cover 5 mins to steam.
Stir/fold, lower heat and cook 15–20 mins until thick and stiff. Rest 5 mins.
Phutu/Krummelpap (crumbly):
Sprinkle 350g maize meal over 750ml simmering salted water.
Cover 10 mins (no stirring), then fluff with a fork.
Steam on low 15 mins covered; fluff again.
Tip: Serve with chakalaka, tomato–onion relish, gravies or a knob of butter.
