How to cook (quick guide)
Bring to room temp, pat dry.
Season generously or marinate (30 mins to overnight).
Oven roast: 200°C (fan 180°C) 40–55 mins until skin is deep golden.
BBQ: Cook over indirect heat 30–40 mins, then finish over direct heat to crisp.
Air fryer: 180°C 28–40 mins (check basket size), turning halfway. Food safety: Cook thoroughly until juices run clear and the thickest part reaches 75°C.
