How to cook (quick guide)
Bring to room temp, pat dry, season well.
Pan-fry: Medium-high heat with a little oil; 4–6 mins per side depending on thickness.
Oven: 200°C (fan 180°C) 16–22 mins.
Air fryer: 190°C 12–16 mins, turn halfway.
Butterfly thicker fillets for faster, juicier results. Food safety: Cook thoroughly until juices run clear and the thickest part reaches 75°C.
