How to cook (quick guide)

  1. Bring to room temp, pat dry, season well (or marinate 30 mins to overnight).

  2. Oven roast: 200°C (fan 180°C) for 40–50 mins until skin is deep golden.

  3. BBQ: Indirect heat 30–35 mins, then finish over direct heat to crisp.

  4. Air fryer: 180–190°C for 24–30 mins, turn halfway.
    Food safety: Cook thoroughly until juices run clear and the thickest part hits 75°C.
