How to cook (quick guide)

Bring to room temp, pat dry, season well (or marinate 30 mins to overnight).

Oven/traybake: 200°C (fan 180°C) 30–40 mins, until lightly browned.

BBQ: Cook over indirect heat 25–30 mins, finish briefly over direct heat.

Air fryer: 190°C 18–24 mins, turn halfway.
Food safety: Cook thoroughly until the thickest part reaches 75°C and juices run clear. Rest 3–5 mins.
