How to cook (quick guide)

Bring to room temp, pat dry, season well (or marinate 30 mins to overnight).

Oven roast: 200°C (fan 180°C) for 35–45 mins until the skin is deep golden.

BBQ: Indirect heat 25–30 mins, then finish over direct heat to crisp.

Air fryer: 180–190°C for 22–28 mins, turn halfway.
Food safety: Cook thoroughly until juices run clear and the thickest part reaches 75°C.
