How to cook (quick guide)

Bring to room temp, pat dry, season well (or marinate 30 mins to overnight).

Pan-fry: Medium-high heat; 5–7 mins per side until browned.

Oven/traybake: 200°C (fan 180°C) 18–25 mins, depending on thickness.

Air fryer: 190°C 14–18 mins, turn halfway.

BBQ/grill: Medium-high heat 12–16 mins, turning often.
Food safety: Cook thoroughly until the thickest piece reaches 75°C and juices run clear. Rest 3–5 mins.
