How to use (quick guide)
Roast potatoes (game-changer):

Heat oven to 220°C (fan 200°C).

Add 2–3 tbsp dripping to a tray and heat 10 mins until shimmering.

Add parboiled potatoes, toss carefully, roast 35–50 mins, turning once.
Yorkshire puddings:

Put ½–1 tsp dripping in each tin; heat until smoking, then add batter and bake hot.
Chips & frying:

Shallow-fry at 180–190°C until golden; drain well and season.
Searing & pastry:

Great for steaks, pie crusts, shortcrust and hot-water pastry for a savoury note.
